Description
Chef John's taco beef lettuce cups give crispy taco shells the day off, and deliver the most perfectly seasoned taco beef in Bibb lettuce leaves. This very flavorful, very savory beef, lightly scattered with cheese, tomato, and green onion, can be served pre-portioned on a tray, or as a taco beef lettuce cup bar.
Ingredients
- 1 tbs. of Avocado Oil
- 1 bunch of Green Onions
- 1 lb. of Lean Ground Beef
- 1 tsp. of Kosher Salt
- 1/2 tsp. of Ground Black Pepper
- 1/2 tsp. of Garlic Powder
- 1 tbs. of Chili Powder
- 2 tsp. of Ground Cumin
- 1 pinch of Cayenne Pepper
- 1/2 tsp. of Oregano
- 1 tbs. of Tomato Paste
- 1/4th cup of Ketchup
- 1/2 cup of Water
- 12 Butter Lettuce Leaves
- 1/2 cup of Cheddar Cheese
- 1/4th cup of Diced Red Onion
- 1/2 cup of Diced Tomato
Steps
- Add oil to skillet and place over high heat. Add white and light green parts of the green onions to the skillet, reserving the dark green parts for a garnish. Add beef, using a spatula to break the beef into smaller crumbles and cook for about 5 minutes
- Reduce the heat to medium-high, adding salt, pepper, garlic powder, chili poweder, cumin, oregano, tomato paste, and ketchup. Continiously stir while cooking for 2 minutes.
- Smooth the mixture using the spatula to an even layer, cooking without stiring until a brown crust forms underneath. Stir once more and allow to form a brown crust once more.
- Add in the water and continue to cook, stirring occasionall,y until the sauce reaches a consistency desired.
- Taste for seasoning, and adjust as needed. To serve, spoon beef into lettuce cups, and garnish with grated cheese, red onion, tomato, and dark green onion slices.
